You know what I love? I love healthy recipes with fresh ingredients that turn out the very first time, with very little tweaking and taste delicious. This is one of those. It speaks for itself.
Mango Salsa

*Serves 2-4
INGREDIENTS:
2 Ripe Mangoes, peeled and chopped
1/8 Cup green or red onions, chopped
1 Cup Red bell pepper, diced
1 jalapeno pepper, seeded and diced
Cilantro, chopped, to taste (optional)
1 Tbsp. fresh lime juice
kosher salt, to taste
DIRECTIONS:
Combine ingredients in a medium bowl. Toss and add salt to taste. Serve immediately or refrigerate until just before serving.
I served this with grilled fish atop this yummy coconut rice. It was light and refreshing; a perfect summer dinner. It would also be delicious served with tortilla chips as a side dish.
